The oven, the dough, the hand

Ninety seconds. That is all that separates a ball of dough from a Neapolitan pizza. Everything that matters happened long before.

An ALFA oven, built from refractory brick

Our oven is an ALFA, made in Italy and built from refractory brick — a material that takes hours to load with heat, then gives it back without faltering, service after service. That is what keeps the floor of the oven at temperature when pizzas come one after another, where an oven that cools between bakes gives uneven results.

It burns olive wood. The choice is not incidental: it is a dense wood that produces a tall flame and a gentle smoke. It reaches 450 °C — and only at that temperature does Neapolitan pizza exist at all.

In the dining room, the oven is the one object people look at. The wall beside it was left bare, on purpose. The flame is enough.

What 450 °C does in 90 seconds

At that heat, the bake takes 60 to 90 seconds. The rim swells all at once, the water held in the dough turns to steam before it has time to escape, and the crumb stays soft inside while the outside sets.

That is what produces leoparding: the irregular dark spots on the rim that sometimes surprise people. They are not burns. They are the signature of a wood-fired Neapolitan bake — and their absence is precisely the sign that a pizza cooked too slowly, in an oven too cold.

No electric oven can do this. It is a matter of physics, not opinion.

A dough that took its time

Type 00 flour, a 48-hour ferment, filtered water.

Forty-eight hours is a long time — and that is the whole point. Over those hours the yeasts work slowly and break down the gluten chains your stomach would otherwise have had to break down itself. Dough pushed through in a few hours is quicker to produce; you pay for it after the meal.

It is why you finish a Neapolitan pizza whole, rim included, without feeling heavy. The rim is not a crust you leave behind: it is the best-baked part of the pizza.

Nothing out of a freezer

Produce is chosen fresh the same morning. The mozzarella, the tomatoes, the basil, the burrata: each one tastes of what it actually is. No pizza is made in advance, no topping waits under a lamp.

Some toppings go on cold, after the pizza leaves the oven — rocket, burrata, salmon, shaved parmesan. Baking them would destroy them.

Stretched by hand, every time

The dough never sees a rolling pin. It is stretched by hand, from the centre outwards, pushing the air towards the edge — that gesture is what creates the rim.

So the edges are slightly uneven, and the disc is never perfectly round. That is the proof no machine came near it.

In Guéliz, since 2024

Gucciano Lab opened in 2024 at 30 Boulevard Moulay Rachid, in the heart of Guéliz. Six months after opening, the house took first place among the pizzerias of Marrakech on TripAdvisor.
